Boulder’s vibrant food scene continues to expand, offering residents and visitors an array of new dining experiences. Here’s a look at some of the latest establishments making their mark.

Odd Rabbit: A Playful Take on Sushi

Christopher and Ariana Teigland, the duo behind Denver’s acclaimed Glo Noodle House, have introduced Odd Rabbit to Boulder. Located at 5863 Arapahoe Avenue, this 90-seat restaurant features a 10-seat chef’s counter and a 40-seat patio. Odd Rabbit offers a “traditionally non-traditional” menu, allowing chefs to explore a broader culinary range beyond conventional sushi. The restaurant opened its doors on April 30, 2026.

True Food Kitchen: Health-Conscious Dining Arrives

True Food Kitchen, an Arizona-based health-focused restaurant chain, is set to open a new location at 1710 29th St. within Boulder’s Twenty Ninth Street Mall this summer. This will be the chain’s second Colorado location, following its Cherry Creek branch. The Boulder restaurant will feature True Food Kitchen’s signature offerings, including pizzas, burgers, entrées, and bowls highlighting organic grass-fed steak and seafood. Notably, it will also be the first among the chain to include a dedicated coffee shop serving espresso drinks and teas.

Casa Juani: Spanish Flavors Downtown

Former Frasca chefs Eduardo Valle Lobo and Kelly Jeun have launched Casa Juani at 901 Pearl Street. Inspired by Valle Lobo’s 98-year-old mother, the restaurant emphasizes Spanish cuisine with a focus on tapas and raw seafood, served family-style to encourage sharing. Early buzz highlights standout dishes like raw scallop and flaky cod, alongside enticing desserts. Casa Juani operates from Wednesday to Sunday, 5–10 PM, with reservations available via its website or OpenTable.

Pattern Break Brewing: Innovative Beers in Familiar Surroundings

Pattern Break Brewing has opened in Boulder, taking over the former Sanitas Brewing location at 3550 Frontier Ave. Co-founded by one of Sanitas’ original partners, the brewery retains the familiar, family- and dog-friendly patio while introducing a fresh name, logo, and a revamped beer menu. Collaborating with former brewers from Cannonball Creek and Call to Arms, Pattern Break offers a creative selection of beers, including a standout horchata lager. The brewery also unveiled a new food menu during its opening weekend. Operating hours are 3 PM–9 PM, Monday through Thursday.

Crepe Therapy Cafe: Expanding Sweet and Savory Offerings

Chef Mawa McQueen’s Crepe Therapy Cafe is expanding with a second location set to open in early June 2026. The new cafe will be located on the ground floor of the Limelight Hotel on University Hill. Unlike fast-service cafes, the new Crepe Therapy will provide a relaxed atmosphere designed for customers to linger. It will offer the same popular menu of sweet and savory crepes, including favorites like the chicken pesto Boulder and bison Rocky Mountain.

These new establishments reflect Boulder’s dynamic and evolving culinary landscape, offering diverse options for every palate.
